Tofu

Our tofu is carefully crafted by hand, with each piece designed to capture the rich flavor and natural sweetness of soybeans. We offer two distinct varieties: the sturdy firm cotton tofu and the delicately soft melt-in-your-mouth oboro tofu.

Ganmodoki

A tofu patty featuring a wonderfully fluffy texture, expertly made from Jonnobi’s tofu and mixed with yam for a delightful flavor.

Amazake

A charming assortment of sweet sake from Niigata, a famous rice-producing area. Celebrated as the beauty beverage, the nutritious rice malt amazake is truly a special treat.

Jonnobi Village “Doburoku”

“We serve out own homemade doburoku, producing high quality in Kashiwazaki region.
We invite you to enjoy the cozy atmosphere and delicious doburoku at Jonnobi.

Jonnobi’s Doburoku is made by homemade Koshihikari rice from Takayanagi and fine water sourced from the majestic Mt. Kurohime, crafted at low temperatures for a refreshing acidity and dry taste.

Jonnobi’s Doburoku won the National Doburoku Research Competition award for three years in a row.”

What is Doburoku?

Doburoku is the classic home-brew style of sake, created by adding koji enzymes mould to steamed rice and water and letting the mixture ferment for about 8 to 15 days.
The production method is essentially the same as that of sake, but due to the lack of filtration that doburoku can taste rich and fresh, allowing you to fully enjoy the natural sweetness of rice, refreshing slight acidity, the aromatic, juicy, and rustic flavors.
It’s alcohol content varies depending on the fermentation level, typically ranging from 12% to 17%.
